Product must be inserted in the stainless steel pockets one by one. The product can be inserted into pockets with either manual operator infeed or automatic feeding unit. To maintain optimal productivity, all pockets must be filled before entering the cutting section.
Pockets convey whole fish to the cutting section, where the head is cut off. Laser measurment system adjust cutting place in order to acchieve highest possible yield.
After de-heading, fish is passed onto vacuum gutting unit, where high power vacuum pump removes fish entrails.

Up to 350 fillets are prepared within a minute with only two operators involved, thanks to the extensive module system that is currently the most compact nobbing system in the market. It includes PERUZA Autofeeder, PERUZA nobbing machine, Vision System for Belly orientation and PERUZA filleting module.
The unique design allows for the equipment size to be the most compact in the market – the machine takes only 8350 x 6350 mm of floorspace! Beyond the dimensions, the thoughtful design allows for highly efficient use of space in smaller factories and various production lines with previously limited capacity.
Our innovative Vision System for Belly orientation makes further production steps more efficient by visually recognizing the belly orientation of each fish and turning it in the needed direction, ensuring that no fish is processed more than once in the system and no repeated cycles are needed.
The water saving feature that allows introducing fish within the system by providing water jets only when fish is approaching the sensor in combination with the Vision System for Belly orientation together with high-precision measurement system ensures reduced water usage, increased yield and thus reduced costs of production.
The latest improvement implemented in the system is the special chain technology that allows complying with higher hygiene standards and reduces system wear and noise. This unique chain technology makes PERUZA nobbing machine the most robust and reliable in the market.
This machine brings the fish through 4 steps of processing
When using PERUZA Autofeeder, the raw product input is made as easy as possible. Firstly, fresh or defrosted pelagic fish such as sardines, mackerel, herring, anchovy (other species are approved on case by case studies) are introduced into the PERUZA Autofeeder hopper tank.
Then fish gets separated and oriented in order to be placed within the pockets separately. Only one operator is needed by each PERUZA nobbing machine to monitor the quality and process, thus the raw products of lower quality can be eliminated from the production process at an early stage.
Every fish is then measured separately by the use of electric signals in order to make digital and most precise measurements for cutting. Afterwards, all fish entered in the separate pockets approach the knives for beheading and detailing.
Fish then get to the vacuum-gutting – by far the most effective and cleanest gutting method used specifically in the PERUZA Pocket-type fish nobbing and filleting machine. As an option, machine can also be equipped with mechanical gutting system upon request, depending on your needs and preferences.
